Fresh Superhot Peppers — Grown Right, Shipped Fast

Every box we ship leaves our high-tunnel operation in Blountville, Tennessee the same day as harvest. No warehouses. No middlemen. When you order from Harmony Springs, you're getting pods that were on the plant days ago — not weeks.

 

We grow more than 30 varieties of Capsicum chinense under continuous environmental monitoring, dialing in temperature, humidity, and soil conditions the same way an engineer optimizes a production process. Because that's exactly what we are: a retired engineer and his partner running a precision pepper operation, not a hobby garden.

 

Fresh superhot peppers are a different product than dried pods, powder, or anything you'll find at a grocery store. Capsaicinoids — the compounds that produce heat — degrade with time and processing. A fresh Reaper or Primotalii at peak ripeness carries heat and complexity that simply cannot be replicated once it's dried or ground. If you've only ever experienced superhots through hot sauce or powder, fresh pods will change your reference point entirely.

 

Our 2026 season varieties include some of the most requested superhots in the chilihead community — Carolina Reaper, Tiberius Mauler, Primotalii, Jay's Peach Ghost Scorpion, Trinidad Scorpion Butch T, and Harmony Springs originals you won't find anywhere else. Fresh pods ship in our SFRB (Small Flat Rate Box) and MFRB (Medium Flat Rate Box) formats via USPS Priority Mail with cold pack as needed.

Why Fresh-Picked Makes All the Difference

Capsaicinoids — the active heat compounds in superhot peppers — are at maximum concentration at peak ripeness and begin degrading immediately after harvest. Independent studies have documented measurable capsaicin loss within days of picking under ambient storage conditions. Our harvest-to-ship window is same day, minimizing that degradation window and delivering pods at their actual rated heat level.

Beyond heat, fresh pods carry volatile aromatic compounds responsible for the fruity, floral, and smoky flavor notes that disappear almost entirely during drying and processing. The "tropical fruit forward" character of a fresh Jay's Peach Ghost Scorpion. The deep chocolate-and-smoke complexity of a fresh Death by Chocolate. These profiles exist in the fresh pod and almost nowhere else.

 

We monitor our high tunnel environment continuously using calibrated dataloggers — temperature, humidity, and soil metrics tracked throughout the grow cycle. Every variety is grown to its full genetic potential before harvest. What you receive is the real thing.

Featured Superhot Pepper Varieties for the 2026 Season

Beautiful gnarly peppers; pushing the limits of the Scoville scale with oily pods.

The 2026 "Must-Have." Featured for its brutal heat and signature long, lethal tails. These have always been quick sellers for us.

New for us in 2025, this pepper has been bred for high-yield, high-pain, and beautiful long tail pods. The heat is instant and brutal. We are growing red, peach, and caramel this year. We are expanding our capacity of these this year.

Our Jay’s Peach is a bit larger than typical. The heat has traits of both scorpion with immediate burn and ghost with the lingering burn. You know exactly what you're in for as soon as you bite it. This has been one of our best performers for the past couple of years.

The authentic Louisiana heavyweight, a staple in our 2026 fresh pepper lineup. We’ve grown these in past years but this year we are expanding.

Dark, smoky, and dangerously hot; one of our most requested varieties this season.

This is a Harmony Springs original. We are on our third season growing these. With all-star superhot lineage, this pepper has delivered the knockout blow at extreme pepper eating contests. Try it if you dare.

The one that started it all. Famous for a slow, creeping heat that builds for several minutes. These are very good producers for us, and this will be the first time we are growing them in the high tunnel.

A legendary superhot and former world record holder. It’s famous for the "scorpion stinger" tail and a burn that is instant, aggressive, and hits the back of the throat immediately. It's likely our favorite superhot to grow, producing well on very healthy plants.

he undisputed OG of the superhot world. It held the world record for 12 years and takes everything you love about a standard habanero—the tropical aroma and bright color—and cranks it up to a legendary "POW!" level. We have grown these for many years and will continue for many more.

Can’t decide? This is a hand-picked selection of whatever is ripening in our high tunnels right now. It’s the full spectrum of our farm, ranging from floral Ghost notes to the nuclear sting of a Reaper. This is our most popular box; we gather as many varieties as available to give you the widest variety.

Ordering & Shipping

All fresh pepper orders ship via USPS Priority Mail in our SFRB (Small Flat Rate Box, ~1/2 lb) or MFRB (Medium Flat Rate Box, ~3 lb) formats. Orders placed Monday through Wednesday ship same or next day. Thursday and Friday orders ship Monday to avoid weekend transit. We include a cold pack during peak summer heat when pod integrity requires it.
