A: Freezing can soften texture but preserves both heat and flavor.

Trivia & Farm Insights

Q: What’s the hottest fresh pepper you grow?

A: Carolina Reapers from our Tennessee high tunnel have tested at 1.4M–2.2M+ SHU — they're also the most requested variety we grow. Primotalii and Tiberius Mauler push into the same range. See all ultra-heat fresh pepper varieties available in the 2026 season.

Q: Why buy fresh peppers from Harmony Springs Farm instead of the grocery store?

A: Grocery stores rarely carry true superhots, and when they do, those pods traveled through a distribution chain that degrades capsaicin concentration and aromatic compounds. Our peppers are farm-grown in Tennessee, hand-picked at peak ripeness, and shipped the same day they're cut.
